Deeply committed to seasonal produce, he selects his ingredients with exacting care : Landes asparagus in spring, a lamb shank slowly braised with rosemary, a cordon bleu with sauce suprême golden to perfection. The market leads. The season decides.

Through his creations, he revisits the classics of tradition with finesse and personality.
